Couscous Salad with Tomatoes, Basil and Scallions

Ingredients

chicken broth

couscous

olive oil

balsamic vinegar

cup
diced seeded plum tomatoes

cup
chopped scallions
1/3
cup
thinly sliced fresh basil
1/4
teaspoon
dried crushed red pepper
salt and pepper
to taste
Instructions
Bring broth to a boil in a medium saucepan. Add couscous and remove from heat.
Cover and let stand for five minutes.
Transfer to a large bowl. Fluff with fork and cool.
Once the couscous is cooled, mix in all the ingredients. Chill and serve.
