How to Make Couscous Salad with Tomatoes, Basil and Scallions

This couscous salad with tomatoes, basil and scallions is one of my all time favorite side dishes. It is the perfect summer time dish to bring along to a barbeque. I have been asked countless times for the recipe whenever I do, definitely a sign of a winning recipe! The original source is unknown, but it is another tried and true recipe passed on to me from my mom, and one that I have on repeat every year. It’s also a great way to use up the tomatoes from your garden! Follow along to see how to make couscous salad with tomatoes, basil and scallions.

Ingredients

Here are the ingredients you’ll need to make couscous salad with tomatoes, basil and scallions:

2 1/4 cups chicken broth

1 10 oz. box of couscous

1/2 cup olive oil

1/4 cup balsamic vinegar

1 cup chopped scallions

1 cup diced seeded plum tomatoes

1/3 cup thinly sliced fresh basil

1/4 teaspoon dried crushed red pepper

salt and pepper to taste

Directions

Bring broth to a boil in a medium saucepan. Add couscous and remove from heat. Cover and let stand for five minutes. Transfer to a large bowl, fluff with a fork and let cool. Once fully cooled, combine all the ingredients and chill.

Couscous Salad with Tomatoes, Basil and Scallions

Servings 6

Ingredients
  

  • 2 1/4 cups chicken broth
  • 1 10 oz box couscous
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 cup diced seeded plum tomatoes
  • 1 cup chopped scallions
  • 1/3 cup thinly sliced fresh basil
  • 1/4 teaspoon dried crushed red pepper
  • salt and pepper to taste

Instructions
 

  • Bring broth to a boil in a medium saucepan. Add couscous and remove from heat.
  • Cover and let stand for five minutes.
  • Transfer to a large bowl. Fluff with fork and cool.
  • Once the couscous is cooled, mix in all the ingredients. Chill and serve.
